WHAT IS THIRD WAVE COFFEE?

Third wave coffee emerged in the 2000s, and is characterized by a focus on the quality of the coffee bean itself. Third wave coffee shops often source high-quality, single-origin coffee beans or proprietary blends and roast them to highlight their unique flavor profiles. Third wave coffee also emphasizes manual brewing methods like pour-overs, and the use of lighter roasts that highlight the natural sweetness and acidity of the coffee.

Second wave coffee emerged in the United States in the 1960s and 1970s, and was marked by a focus on specialty coffee and the introduction of espresso-based drinks. Second wave coffee was characterized by the growth of chain coffee shops, and the popularization of drinks like the latte and cappuccino. Coffee was now being seen as a premium product, and the focus was on the experience of drinking coffee.
