Peru offers so many dramatic landscapes and coffee growing micro-climates that the possibilities are endless. In the case of Amazonas, the name tells the story. On the western border of this mountainous Andes region, lush high altitude tropical forests and drier desert-like regions jockey for position before sloping downwards to the east into the world’s largest tropical rainforest...the Amazon.

This specific bourbon lot from Peru by Eiser Carranza is unique due to the 120 hours of fermentation the coffee is subjected to before washing. First, 48 hours are spent in cherry in closed grainpro bags, and then another 72 hours in closed grainpro bags after depulping. These 5 days impart and magnify the elevated acids, florals and fruits in this lot, before being washed and laid out to dry on raised beds.

Never run out of coffee again.

The biodiversity and geography combine with clashing weather patterns to create some very unique growing conditions that the Carranza's have to wrestle with. However, in the case of the Carranza family, we’ve found a group of outside-the-box thinkers who are much more experimental in their approach than many of their neighbors in the region. From the variety selection to the post harvest processing, this group is pushing the region forward by mixing traditional methods with new styles to create new flavors to distinguish their lots on the cupping table. Eiser, cousin of Germán Carranza, is a 27 year old coffee producer that has been cultivating at El Mirador for 5 years.
